With an unwavering belief that malt provides a potent and vital contribution to the final flavour profile of our whisky, Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character. Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Rose’s own 36-month air dried Ex-Rye Casks, each cooperated with a specific balance of both char and toast. The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Experience the unparalleled taste of our distinctive Australian Rye Whisky, meticulously crafted with a harmonious blend of heritage rye grain, winter wheat, malted barley, and chocolate malt. Aged to perfection for four years in an ex-Shiraz barrel, this whisky boasts a flavour profile that is both captivating and complex.
To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.
The Quintessence Single Malt Whisky was exclusively crafted by Old Kempton Distillery and matured in small 20L Australian Tawny Casks until ready to savour. The complexity of the whisky was further evolved in 300L and 500L exclusive and rare Tawny Port casks from the heart of the Douro Valley, Portugal. The result of Quintessence is a complex, rose gold Tasmanian Whisky with notes of coconut, nutmeg and poached pears. Awarded Bronze at the 2022 International Wine & Spirit Competition. The judges noted the Single Malt Whisky to have a “punchy palate of banana and strawberry sundae drizzled with caramel. Sweet and pleasant.”

We aim to maintain a continuous stock of this whisky as it represents what we love best. A mash-bill of four different malts, three from Griffiths NSW, one of which is roasted to chocolate, together with a heavily peated malt from the Scottish borders in the UK. The cuts are deep to give the heavy, oily spirit we’re looking for. Aged in small-format ex-bourbon barrels from Kentucky, re-coopered here in Australia. We hope you enjoy
After the customer feedback from our cask strength special release ‘Full Noise’ we have decided to make it part of our core range. The same distinctive spirit and ex-bourbon finish sweetness of our O'Grady's whisky, Full Noise is bottled straight from what we feel are ‘stand-out’ barrels.
Most Australian whisky distilleries focus on ex-fortified or wine-barrel ageing, however we made it our early ambition to become Australia’s ex-bourbon single malt specialist. We produce one of the most distinctive new-make spirits and aim for cask influence to balance this rather than it becoming the star of show. American Oak is much more suited for this. That said we have also had some incredible results with fortified barrels as fans of our blue French oak line will know. This has now come to an end and we’re super excited to release a new member of the core line, the Double Wood. The first barrels we filled back in 2018 were 3 gorgeous old Portuguese tawny port barriques. At our in-house tasting these have consistently been our favourite barrels. What we love is that their size has given the spirit an elegant French Oak complexity with just a very subtle fortified richness. We’ve married this with the first of our larger format ex-bourbon barrels. This ensures that whilst the toffee’s, vanillas and caramels which our whisky in known for are still very much the star of the show, the French oak complexity adds another level of detail.

The former Wardour Castle inn is the first stop in our heritage series which offers a tour through Oatlands' most iconic buildings weaving a tale of dark by deeply colourful history. Like their namesakes, each cask matured whisky in this series is complex, intriguing and essentially flavoured by time. The former Warder Castle Inn, now a two-storey stone residence, stands with a commanding presence at Oatlands’ Southern End. Its striking iron hip roof, carefully chiselled stone quoins, and a stately five-bay facade tells takes of a historical significance. Together with its stone outbuildings, the property forms a charming courtyard, echoing whispers of bygone merriment and revelry. Edmund White, The original innkeeper, was known for his generous spirit, stretching the licensing rules and turning the inn into a vibrant social hub, hosting committee meetings for the Oatlands races, public balls and even patrons resistant to leave after-hours with statements like, “Surely you won’t stop me now, I’ve come seven miles for this!” Today, as a private residence, this former inn still retains its historical charm reflected in the essence of this limited edition whisky - a tribute to resilience transformation, and enduring charisma.
This abstract Single Malt whisky is named Entropy and was painted on a canvas of distilled spirit crafted by Old Kempton Distillery under the watchful eye of business partners John Ibrahim and Bill Lark. This distinguished Tasmanian Whisky was initially aged in small Tawny & Apera casks and then further evolved in a combination of Tokay, Muscat and Muscadelle Casks from the Rutherglen region in Victoria. Entropy's polished mahogany glow results from the rich and decadent notes of rhubarb crumble, marmalade and maple syrup. Awarded Silver at the 2022 International Wine & Spirit Competition, with a score of 90. The judges noted the Single Malt Whisky to portray “burnt toast on the nose with hints of wood, spice and all things nice. Aromatics of coffee creams, red fruits. A good all-round palate with richness and sweetness.” The IWSC describes the spirits awarded Silver to be “accomplished with good balance, strong character and good complexity. A classic example of its style or variety”.
The triple distilled single malt is called Emulsion, it was crafted by Damian Mackey, our founder, John Ibrahim's partner in Shene Distillery. This Single Malt Whisky matured in special handcrafted 100L Apear Casks and further evolved in an exclusive 700L Tawny Cask from the heart of the Douro Valley in Portugal and premium 300L French Oak Cognac Casks. This strawberry gold Tasmanian Whisky is light and elegant with notes of pineapple, vanilla and turkish delight. Awarded Silver at 2022 International Wine & Spirit Competition, with a score of 90. The judges noted the Single Malt Whisky to offer "dried fruits, apple tart, cinnamon, toffee ice cream, custard and wood on the nose. The palate brings cinnamon, coming through on the finish to make a rounded spirit." The IWS describe the spirits awarded Silver to be "accomplished with good balance, strong character and good complexity. A classic example of its style or variety".
Matured in ex-Sherry fortified wine casks from Jerez, Spain, El Sol is a well-rounded, rich, smooth, and complex whisky that celebrates the bright summer sun of Jerez de la Frontera, Andalusia. The oak casks, previously used for maturing a variety of Sherries such as Oloroso, Pedro Ximenez, Amontillado, Palo Cortado, Fino, and Moscatel, impart a luscious and full-textured profile to this single malt. El Sol boasts an enticing aroma of flavours of dried fruits, crème brûlée, coffee, cacao, and dark chocolate, culminating in a lingering finish that captivates the senses.

Arthur's Lake is located 1042 meters above sea level in the central highlands rugged region of Tasmanian and is the pristine water source for Callington Mill Distillery's single malt whisky. Arthurs Lake is also home to Callington Mill Blue Lake Lodge - where we have been quietly maturing our whisky in the brooding climate and biodiversity of the Tasmanian wilderness. It is within this unspoiled setting that our whisky casks mature outside, soaking in the pure air and clean waters, imparting unique wild characteristics to our whisk of honey, butterscotch, luscious white flowers, coconuts, and vanilla. A nutty, layered and sweet romish approachable whisky with a nougat finish that just keeps going. Viscous, robust, complex - a wilderness that refuses to be tamed.
The spirit for the Apera Fusion Single Malt Whisky was crafted under the careful tutelage of Bill Lark, our founder John Ibrahim's business partner at Old Kempton Distillery. Initially aged in 20L Australian Apera casks and further matured in 300L and 500L Apera casks from the Barossa Valley in South Australia. The Apera Fusion Tasmanian Whisky offers enticing and juicy notes of mandarin and green apple that evolve into spearmint and honey, resulting in a rich copper glow.
Our super-premium, limited-release 12-year-old Single Malt whisky is made with WA-grown malted barley before being aged in the south west of WA in bourbon barrels, imparting a hint of sweetness and fine line of spice.
