Copper & Cane Distilling, founded by traditional distiller Guy Dalby in 2019, embodies a deep-rooted passion for artisanal spirit production. Previously operating as Normanby Distillery, the brand carries forward the historic legacy of the renowned Normanby Rum Brand, which was an internationally acclaimed producer from the 1870s to 1968, based in what is now the site of Westfield Strathpine Shopping Centre. At its zenith, the distillery produced over 5000L of rum daily, gaining recognition with a Bronze Medal at the Paris International Exposition of 1878. Today, located in Brendale, Copper & Cane prioritises quality over quantity. While continuing the tradition of rum distillation using local molasses, the distillery has also embraced the creation of gins infused with native botanicals and local fruits, crafted in a 300L copper pot still. This shift to a more crafted approach reflects the distillery's commitment to preserving traditional methods while innovating with contemporary Australian ingredients. The distillery’s rich history is tied to the development of the Strathpine and North Pine area, initially known for its timber and sugar mills. The original Normanby mill, established in 1873, was pivotal in the area’s rum production, surviving through changes in ownership and adaptations in production methods until ceasing operations in 1968. Following its closure, the distillery site underwent several transformations, eventually contributing to local heritage preservation efforts through a replica distillery established during the Q150 celebrations. Copper & Cane Distilling marks a reawakening of this storied past under Guy Dalby’s stewardship. With a foundation in traditional distilling techniques acquired in Tasmania and a vision honed by his dedication, Dalby has revitalised the legacy with a focus on crafting distinct flavours and modern, locally inspired spirits. This new chapter honours the historical significance of Normanby and introduces innovative spirits that reflect the rich botanical diversity of the region.
