We are a family run business that specialise in single malt whisky only. Make one thing and do it well! Our 4 malts recipe, using own spring water unfiltered straight from the source, long & open fermentations, along with our deep cuts create our truly unique delicious spirit. We aim for our whisky to be 50/50 - 50% our spirit taste and 50% of the barrel influence. We are the only Off-grid whisky distillery in Australia and the only certified carbon neutral whisky in Australia. We also donated 1/3 of our property to charity to turn back to bush. Kinglake whisky is made and ages in the natural bush quietly. We are the only Australian's Distillery to have done a private bottling with Nick's Wine Merchant and had amazing reviews from international whisky bloggers. We believe in authenticity not awards.

Kinglake Full Noise Cask Strength Single Malt Whisky

After the customer feedback from our cask strength special release ‘Full Noise’ we have decided to make it part of our core range. The same distinctive spirit and ex-bourbon finish sweetness of our O'Grady's whisky, Full Noise is bottled straight from what we feel are ‘stand-out’ barrels.

Kinglake Double Wood Single Malt Whisky

Most Australian whisky distilleries focus on ex-fortified or wine-barrel ageing, however we made it our early ambition to become Australia’s ex-bourbon single malt specialist. We produce one of the most distinctive new-make spirits and aim for cask influence to balance this rather than it becoming the star of show. American Oak is much more suited for this. That said we have also had some incredible results with fortified barrels as fans of our blue French oak line will know. This has now come to an end and we’re super excited to release a new member of the core line, the Double Wood. The first barrels we filled back in 2018 were 3 gorgeous old Portuguese tawny port barriques. At our in-house tasting these have consistently been our favourite barrels. What we love is that their size has given the spirit an elegant French Oak complexity with just a very subtle fortified richness. We’ve married this with the first of our larger format ex-bourbon barrels. This ensures that whilst the toffee’s, vanillas and caramels which our whisky in known for are still very much the star of the show, the French oak complexity adds another level of detail.
